MIMI’S GERMAN CHOCOLATE CAKE

1 4oz. pk. Bakers German Sweet Chocolate
½ cup boiling water
1 cup butter
2 cups sugar
4 egg yolks
1 teaspoonful vanilla
2 ½ cups plain flour
1 tsp. baking soda
¼ tsp. salt
1 cup buttermilk
4 egg whites

Melt chocolate in boiling water, cool.
Cream butter and sugar until fluffy.
Mix in egg yolks one at a time
Blend in vanilla and chocolate
Sift together flour, salt and baking soda, blend into the chocolate mixture in portions, alternating with the buttermilk.
Fold in the beaten egg whites
Pour the batter into 3 greased and floured pans.
Bake in a pre heated oven at 325* 30 to 40 minuets.

Frosting:

1 cup evaporated milk
1 cup sugar
3 egg yolks, lightly beaten
½ cup butter
1 tsp. vanilla
1/3 cup coconut
1 cup pecan pieces

Combine the first 5 ingredients in a sauce pan, Cook over low heat, stirring constantly until thick ( about 14 min).
Add the pecans and coconut, cool, spread evenly on top of cake layers
